The Flavor Profile
Because these beans are medium-roasted, you’re hitting the sweet spot between the bean’s natural character and the toasted notes of the roast. You can generally expect:
-
Primary Notes: Rich milk chocolate, toasted hazelnuts, and a hint of malt.
-
Acidity: Very low and gentle. It’s often described as "soft" or "round," making it incredibly easy to drink.
-
Body/Mouthfeel: Creamy and buttery. It provides a heavy, satisfying coat on the palate that lingers.
Why it Excels as Espresso
Brazil Santos is a favorite for espresso for a few specific reasons:
-
The Crema: Due to the natural processing methods often used in Brazil, these beans tend to produce a thick, golden-brown crema that looks beautiful in the cup.
-
The "Base" Factor: It is the ultimate foundation. Whether you drink it as a straight shot or drown it in steamed milk for a latte, the chocolatey nutty flavors cut through without being overpowered.
-
Consistency: It is famously forgiving to dial in. If your grind size is slightly off, a Brazil Santos will usually still taste pretty good, unlike a finicky light-roast Ethiopian bean.
Pro Tip: To really lean into that sweetness, try a brewing temperature around 91°C–93°C. This keeps the nutty sugars intact without pulling out any charred bitterness.
